This rhubarb Turkish delight is a unique twist on the traditional Middle Eastern treat. The tartness of the rhubarb blends beautifully with the sweetness of the candy, creating a delicious balance of flavors. Perfect for gifting or enjoying as a sweet treat!

Prep Time: 30 minutes

INGRÉDIENTS

PRÉPARATION
  1. In a saucepan, combine the chopped rhubarb and water. Cook over medium heat until the rhubarb is tender and breaks down.
  2. Strain the mixture through a fine-mesh sieve, pressing to extract as much liquid as possible. Discard the solids and return the liquid to the saucepan.
  3. Add the sugar, cornstarch, cream of tartar, and lemon juice to the rhubarb liquid. Cook over medium heat, stirring constantly, until the mixture thickens and becomes glossy.
  4. Remove from heat and stir in the rose water, if using.
  5. Pour the mixture into a greased 8 x 8-inch baking dish and spread evenly.
  6. Let it cool completely and harden, preferably overnight.
  7. Once set, cut the Turkish delight into squares and roll each piece in powdered sugar to coat well.
