INGRÉDIENTS- 2 cups rhubarb, chopped
- 1 1/2 cups water
- 2 cups sugar
- 1/2 cup cornstarch
- 1/2 teaspoon cream of tartar
- 1 teaspoon lemon juice
- Powdered sugar, for dusting
PRÉPARATION- In a saucepan, combine the chopped rhubarb and water. Cook over medium heat until the rhubarb is tender and breaks down.
- Strain the mixture through a fine-mesh sieve, pressing to extract as much liquid as possible. Discard the solids and return the liquid to the saucepan.
- Add the sugar, cornstarch, cream of tartar, and lemon juice to the rhubarb liquid. Cook over medium heat, stirring constantly, until the mixture thickens and becomes glossy.
- Remove from heat and stir in the rose water, if using.
- Pour the mixture into a greased 8 x 8-inch baking dish and spread evenly.
- Let it cool completely and harden, preferably overnight.
- Once set, cut the Turkish delight into squares and roll each piece in powdered sugar to coat well.
