INGRÉDIENTS
2 stalks of rhubarb
250 ml (1 cup) red wine vinegar
80 g sugar (1/2 cup)
Half a red onion, thinly sliced
Goat cheese
Mixed salad
Mixed nuts and seeds
4 tablespoons olive oil
Salt and pepper
PRÉPARATION
In a saucepan, heat the vinegar and sugar until the sugar dissolves completely. Pour over the chopped rhubarb and onion.
Let it steep and marinate for one hour. Drain them, reserving a few tablespoons of vinegar, then mix them with 4 tablespoons of olive oil and season.
You will get an excellent vinaigrette.
Assemble the salad and drizzle with a little vinaigrette.
