Baked Salted Brie with Rhubarb and Mushrooms

INGRÉDIENTS- 1 wheel of brie
- 1 cup sliced mushrooms (button or cremini)
- 1/2 cup rhubarb stalks, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon fresh thyme leaves
- 1 garlic clove, minced
- Salt and pepper to taste
- Fresh thyme sprigs for garnish
PRÉPARATION- Preheat your oven to 350°F (175°C).
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the sliced mushrooms and chopped rhubarb to the skillet. Cook until the mushrooms are tender and the rhubarb has softened, about 5 to 7 minutes.
- Stir in the balsamic vinegar and fresh thyme leaves. Season with salt and pepper to taste. Remove from heat.
- Place the brie in a small baking dish. Top with the rhubarb and mushroom mixture. Bake in the preheated oven for 15 to 20 minutes, or until the brie is tender and melted. Garnish with fresh thyme sprigs and serve immediately with crusty bread or crackers.
