Rhubarb Moscow Mule

INGRÉDIENTSFor the rhubarb syrup- 4 cups / 400 g chopped rhubarb
- 1 cup / 200 g sugar
- 1 cup / 250 ml water
For the Moscow Mule- 150 ml vodka
- 3-4 teaspoons rhubarb syrup
- 2 tablespoons fresh lime juice
- 1 cup / 250 ml non-alcoholic ginger beer
- Lime wedges for garnish glasses
PRÉPARATIONTo make the rhubarb syrup- In a saucepan, combine the chopped rhubarb, sugar, and water. Bring to a boil and cook over low heat for 7 to 10 minutes, until the rhubarb is very tender and falling apart.
- Strain the rhubarb syrup through a fine-mesh sieve and store in a clean, sterilized bottle in the refrigerator.
To make the rhubarb Moscow Mule- In a cocktail shaker, combine the vodka, rhubarb syrup, and lime juice with ice, then shake.
- Pour into two tall glasses filled with ice and top up with ginger beer. Serve with lime wedges.
