For the Moscow Mule


PRÉPARATIONTo make the rhubarb syrup
  1. In a saucepan, combine the chopped rhubarb, sugar, and water. Bring to a boil and cook over low heat for 7 to 10 minutes, until the rhubarb is very tender and falling apart.
  2. Strain the rhubarb syrup through a fine-mesh sieve and store in a clean, sterilized bottle in the refrigerator.

To make the rhubarb Moscow Mule
  1. In a cocktail shaker, combine the vodka, rhubarb syrup, and lime juice with ice, then shake.
  2. Pour into two tall glasses filled with ice and top up with ginger beer. Serve with lime wedges.
