INGRÉDIENTS- 2 cups cooked rice (preferably day old)
- 1/2 pound beef, thinly sliced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, diced
- 1 medium tomato, diced
- 1 jalapeño pepper, sliced (seeds removed for a milder version)
- 1 cup diced rhubarb
- 3 garlic cloves, minced
- 2 tablespoons soy sauce
- 1 tablespoon chili sauce oysters
- 1 teaspoon chili paste or sriracha
- 2 tablespoons vegetable oil
- Chopped fresh cilantro (for garnish)
- Salt and pepper to taste
PRÉPARATIONPrepare the beef- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the thinly sliced beef and cook until browned and cooked through. Remove from the pan and set aside.
Cook the vegetables and rhubarb- In the same pan, add the remaining 1 tablespoon of vegetable oil.
- Add the minced garlic and diced red onion, and sauté until fragrant and the onions are translucent.
- Add the diced red and green bell peppers, sliced jalapeño, and diced rhubarb. Cook for about 3 to 4 minutes until the vegetables are slightly tender and the rhubarb is softened.
Combine Ingredients- Add the cooked rice to the pan, breaking up any lumps with a spatula.
- Return the cooked beef to the pan.
- Pour in the soy sauce, oyster sauce, and chili paste or sriracha. Mix well to combine all ingredients. Add the diced tomatoes and cook for another 2 minutes, until the tomatoes have softened slightly. Season and garnish. Season with salt and pepper to taste. Remove from heat and garnish with freshly chopped cilantro.
