Recipe Spicy Rhubarb and Beef Fried Rice

Have you ever thought of combining the tartness of rhubarb with the spice of jalapeños in a fried rice dish? Try this unique spicy rhubarb and beef fried rice!

Prep time: 15 minutes
Cook time: 20 minutes
Serves: 4

INGRÉDIENTS

PRÉPARATIONPrepare the beef
  1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  2. Add the thinly sliced ​​beef and cook until browned and cooked through. Remove from the pan and set aside.

Cook the vegetables and rhubarb
  1. In the same pan, add the remaining 1 tablespoon of vegetable oil.
  2. Add the minced garlic and diced red onion, and sauté until fragrant and the onions are translucent.
  3. Add the diced red and green bell peppers, sliced ​​jalapeño, and diced rhubarb. Cook for about 3 to 4 minutes until the vegetables are slightly tender and the rhubarb is softened.

Combine Ingredients
  1. Add the cooked rice to the pan, breaking up any lumps with a spatula.
  2. Return the cooked beef to the pan.
  3. Pour in the soy sauce, oyster sauce, and chili paste or sriracha. Mix well to combine all ingredients. Add the diced tomatoes and cook for another 2 minutes, until the tomatoes have softened slightly. Season and garnish. Season with salt and pepper to taste. Remove from heat and garnish with freshly chopped cilantro.
