You don't need a ton of sugar to make a delicate-tasting rhubarb compote. Try adding dates for a sweeter, more nutritional taste.

INGRÉDIENTS- 2 cups rhubarb (215 g), cut into large chunks
- 3 x 4 cups date fruit (100 g), cut into small chunks
- 1 teaspoon vanilla extract
- 1 cup water
PRÉPARATION- Place all ingredients in a pot over medium-high heat and bring to a boil.
- Reduce heat and simmer until fruit is very soft.
- Pure with an immersion blender if desired.
- Simmer until compote reaches desired consistency, more or less runny.
- Transfer to an airtight container and store in the refrigerator for a few days.
