Rhubarbe Colorado Red
A rare, pure red variety, an exclusive cultivar of High Altitude Rhubarb. The first plant found apparently wild in the forest when they bought the house in 1991. The stalks are the length of typical celery stalks, about 12 inches and about 3/4 inch in diameter. Most are dark red outside and inside.
This strain reaches its peak 2-3 weeks later than Victoria. She is also more tart than Victoria with tougher skin. The stems bring an exceptional red color to any dish or juice. Sometimes you just need to include one or two Colorado stems for every 10 Victoria stems when cooking. This is enough to give a red color to the final mixture.

We sometimes include one or two of these for each 10 Victoria stalks when cooking. That is sufficient to impart a medium red color to the final mix. As of 2018 we are in the process of patenting this variety and, once complete, will be able to sell them at the farm.
