INGRÉDIENTS
1.8 l chopped rhubarb
1 large onion
250 ml vinegar
300 ml sugar
4 ml ginger
5 ml cinnamon
1 ml cloves
1 ml cayenne pepper
A few grains of cayenne pepper
5 ml pickling spices in a cheesecloth
PRÉPARATION
Wash and cut the rhubarb into pieces.
Peel and slice the onion.
Mix the rhubarb, onions and vinegar.
Cook uncovered for 20 minutes.
Add all other ingredients.
Cook uncovered until the chutney has the consistency of marmalade, about 40 minutes, stirring to prevent sticking.
Empty into sterilized jars while still hot.
Makes about 875 ml.
