INGRÉDIENTS
2 cups rhubarb stalks, cut into very small 1/4-inch pieces
1 cup organic sugar
1 cup vinegar (raw apple cider vinegar or any other light variety)
PRÉPARATION
Combine the rhubarb and granulated sugar in a small bowl, cover, and refrigerate for 4 to 5 days, stirring every 12 hours.
Strain the liquid, pressing hard on the solids.
Mix the rhubarb syrup with the vinegar and pour into a lidded jar and refrigerate.
You can use it immediately, but after a week, the flavors will deepen, meld, and harmonize. Add it to your cocktails or sparkling water.
